Chocolate Chip Oatmeal Cookie Recipe

I got on a baking kick and thought I'd use up some stuff in my pantry.

Chocolate Chip Oatmeal Cookie Recipe
Dry Ingredients (combine together & set aside):
1/2 cup rolled oats, quick or regular
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup teaspoon cinnamon
Wet Ingredients (cream all ingredients before adding eggs):
1 cup (2 sticks) butter, softened
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon lemon juice
2 eggs
Mix Wet & Dry Ingredients blending well, then add:
3 cups semisweet chocolate chips
1 1/2 cups chopped walnuts (optional)
Use ice cream scoop or make similar sized balls and place 2 1/2 inches apart on prepped cookie sheet (I used sheets lined with parchment paper...easy cleanup).
Bake until cookies are lightly browned, 16-18 minutes @ 350 degrees. I like my cookies crispy so I baked for the full 18 min.
Yield: 2 dozen cookies ( I got 3 dozen out of this batch)

speaking of baking... those snickerdoodles were fabulous. yes, i said "were". jim finished them off when he got home. i told you he liked cookies!
